4-5 Overripe bananas
{optional...but encouraged} 1-3/4 cups chocolate chips

Orange cream Fudge:
1 bag white chips (I used Nestle Premium white chips)
1 can white frosting (NOT whipped)
Crush Orange Ice Cream topping

Melt frosting in a saucepan over low heat (so to not burn it) until frosting is glossy. Add chips and continue cooking over low heat stirring until chips are melted and blended well with frosting. Pour contents out into a greased 8" x 8" pan (or parchment paper lined pan). Drizzle Orange Crush Ice Cream topping over top and if desired, swirl topping through fudge with a fork or toothpick. Cool in refrigerator until set. Cut fudge to desired sized pieces once set. This recipe can be altered to taste by using different flavors of chips and frosting.

White chips + lemon frosting = lemon fudge
Chocolate chips + fudge frosting = chocolate fudge
Peanut butter chips + white frosting = peanut butter fudge
Andes Mint chips + Chocolate frosting = Mint Chocolate Fudge
(I add a touch of mint extract to these)
Let your imagination run with this and make all sorts of unheard of fudge.
I found Cinnamon chips and made cinnamon fudge that everyone loved!

Quick Giardiniera

This quickly pickled, spicy Italian salad of mixed sliced vegetables is great for an antipasto platter, served with grilled meat or chopped up and put on a sandwich.

•2 cups white vinegar

•2 cups water

•2 tablespoons sugar

•1 bay leaf

•1 teaspoon crushed red pepper, divided

•1 teaspoon salt, divided

•1 small head cauliflower, trimmed and cut into bite-size florets

•2 stalks celery, thinly sliced

•1 carrot, thinly sliced

•1 red bell pepper, cut into 1-inch pieces

•3 tablespoons extra-virgin olive oil

•1/4 teaspoon freshly ground pepper

1.Cover and refrigerate for up to 1 week.

2.5 cups

3.Combine vinegar, water, sugar, bay leaf and 1/2 teaspoon each crushed red pepper and salt in a large saucepan. Bring to a boil.

4.Add cauliflower, celery, carrot and bell pepper. Reduce the heat to maintain a lively simmer and cook until the vegetables are tender-crisp, about 5 minutes. Remove from the heat and let stand for 5 minutes. Reserve 3 tablespoons of the cooking liquid, then drain.

5.Transfer the vegetables to a medium bowl. Stir in oil, pepper, the remaining 1/2 teaspoon each crushed red pepper and salt and the reserved cooking liquid. Refrigerate for at least 25 minutes to chill. Stir and serve with a slotted spoon.

Bacon Wrapped Little Smokies

The method is simple, strips of bacon get cut into three or four pieces. Then, each piece of bacon gets wrapped around a little smokie sausage and secured with a toothpick. When all of the little smokies are enveloped in bacon, they get placed on a rimmed baking sheet and topped with a bunch of brown sugar. As they bake, the bacon crisps up, and the brown sugar turns into this ooey gooey glaze that’s addicting!

Easy Peanut Brittle

1 cup white sugar

1/2 cup light corn syrup

Dash of salt

1 to 1 1/2 cups shelled raw peanuts

1 tablespoon butter or margarine

1 1/2 teaspoons baking soda

1 teaspoon vanilla

Spray a baking sheet generously. Combine sugar, corn syrup and salt in a 3 quart microwave bowl. Stir in peanuts and microwave on high until light brown. (About 9 to 10 minutes.) Stir twice while cooking.(This gets very hot, so be careful not to get burned and I use a glass casserole dish. Don’t use tupperware. It will melt.) Stir in remaining ingredients. Mixture should be light and foamy. Quickly spread as thin as possible on greased baking sheet. Let cool and break into pieces. Makes about 1 pound of peanut brittle. Enjoy!
