1 Indian fried egg plant on Wed Jun 18, 2008 7:36 pm


1 med eggplant about 11/2 lbs
1cup all purpose flour
1tsp baking powder
1tsp salt
1tsp tumeric
2tsp curry powder
1 cup of milk
1 egg
1/4 cup salad oil

wash eggplant.beat remaining ingredients with rotary beater until smooth
heat oil 1 inch deep

cut eggplant into slices dip slices in batter letting excess drip off into bowl
fry in
hot oil until golden brown, drain if desired salt to taste if desired

this is good with any meal, I like serving it with spaghetti and meat balls,as a side dish..
makes four servings
