1 onion, diced
2 cloves garlic, minced
pinch of red chili flake
1/2 tsp. of italian herb blend
4-5 chicken thighs or 3 chicken breasts, cubed
3 zucchini, chopped
juice of 2 lemons
1/2 cup water or chicken broth
1 14 oz. can of diced tomatoes
1 14 oz. can of canellini beans
1 1/2 cups coooked pasta (spirals, shells or tube shapes work well)
Saute onion on high heat for 2 minutes, add garlic and saute for a few more seconds.
Add chili, herbs and chickenócook for 3 more minutes.
Add zucchini, cook 1 minute or until slightly tender.
Add lemon juice and water or broth, and canned tomatoes. Cook 4 minutes.
Add beans and cooked pastaócook 1 more minute or until beans are warm.
Serve with parmesean cheese.
