2 c. fresh snow pea pods, blanched
2 c. chicken, cooked and cubed
1/2 c. sliced green onions
1/2 c. sliced water chestnuts
1/2 c. mayonnaise
1 tsp. soy sauce
1/4 tsp. pepper
1/8 tsp. ginger
1 tsp. sherry or pineapple juice
1/4 c. toasted slivered almonds
Cook macaroni. Combine macaroni, pea pods, chicken, onions and chestnuts.
In small bowl, blend mayonnaise, soy sauce, pepper and ginger. Add sherry. Pour over pea pod mixture. Mix well. Chill at least 3 hours. Serve on lettuce and garnish with almonds.
