1 SPANISH EGGS on Mon Feb 16, 2009 3:59 am


1 to 2 corn tortillas, cut into 1/2 inch squares
2 tbsp. vegetable oil
1 clove garlic
1 onion, chopped
1 green pepper, chopped
5 lg. mushrooms, sliced
8 eggs, beaten
2 lg. tomatoes
Cheese, grated
2 tsp. salsa

Saute tortilla squares, garlic, onion, green pepper and mushrooms in oil. Add eggs, stir frequently. When eggs are cooked add tomatoes, salsa and cheese. Salt and pepper to taste.

A lot of what we call "Mexican food" is never served in Mexico, but you can order "huevos y hamon" in Mex, and get it immediately (usually with a little chiles thrown in).
